Baked Apple Breakfast Cookie

I would love to cook a nice breakfast every morning with a full veggie omelet and a side of fruit to sit down with a glass of tea or OJ.  Open up my nook and read a chapter of two of my recent book before heading out to work.  But uh no, I enjoy sleep too much.

Quick and easy breakfast is key on work days.  Allergy and medication fog slows me down no matter what time my alarm sounds.  I want to look decent with a bit of make-up, oh and my uniform so breakfast has to be preplanned for 5 minutes or less.

My regular breakfast sandwiches, egg scrambles, and fruit wraps were becoming a bit boring so earlier this week I experimented with some apples and made a fun gluten free breakfast cookie I’ve been eating all week.

Gluten–Free Baked Apple Breakfast Cookie

Who doesn’t want a bit of dessert for breakfast?  This slightly sweet breakfast is full of fiber and fruit to keep you full through the morning.

Ingredients

  • 1 cup All-Purpose Gluten-Free Flour (I used Bob’s Red Mill)
  • 1 cup gluten free oats (I used Bob’s Red Mill)
  • 1 1/2 teaspoons xanthan gum
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup sugar (I use Beet Sugar )
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground ginger
  • 2 eggs
  • 1 cup alternative milk (I use Tempt Unsweetened Hemp Milk )
  • 1/8 cup olive oil
  • 2 tablespoons raspberry jam
  • 2 apples, peeled and sliced thin

For bottom of pan

  • 3 tablespoons olive oil
  • 2 tablespoons sugar (I used Beet sugar)
  • 1 tablespoon honey

Instructions

  1. Preheat oven to 350 degrees.  Using a spring form or tart pan brush bottom of the pan with the oil and add sugar and honey.  Place a layer of apples on the bottom of the pan to cover it completely.
  2. In a bowl mix together the dry ingredients (flour, oats, salt, baking powder, xanthan gum, sugar) using a fork.  In a separate bowl mix together wet ingredients.    Then add slowly combine wet ingredients into dry ingredients.
  3. Add in the jam after the batter is combined but not over mixed.  Pour the batter on top of apples already in the bottom of the pan.  Layer apples on top of batter.  I made a pretty circular pattern so Hunni would smile.  Don’t they look like smiles. Open-mouthed smile  A quick spray of olive oil and sprinkle of sugar and into the oven for 45 minutes.
  4. If I’m serving to others I flip the dish to show off the caramelized apples on the bottom.  For quick breakfast I cut a slice and grab some fruit to go.  If I have the time a bit of powdered sugar feels fancy.
