What’s for Lunch?–On the Run

Lunch on the run does not usually lead to good decisions.  There are list, magazine columns and books to help make good choices among the 1200 calorie burritos and salads that are worse than a triple cheese burger. Only problem is these lists aren’t written for me.  Yep…they don’t make a list for super allergy girl

Full restaurants work but aren’t fast.  Fast food options are rare and the few available aren’t filling.  Enter the grocery store.  Simple choices make a full meal and often much cheaper than eating out.

I found Spring Mix and pre-chopped veggies for coleslaw on last day sale.  They were $1 off each.  Add two hardboiled eggs, a few olives from the olive bar (I checked to see if they had soy oil) and some salad dressing.  Such a filling lunch for about $6.  And that was just one simple option.  Now if only I could have the grocery store bring it to me. Smile

Last Week’s Goals

  • Read  and relax.  Oh so fun!  While Hunni recouped from the “death flu” (his wording) he sped through what he had left of The Hunger Games Trilogy and Divergent.  I enjoyed a book on manners…trust me its good and funny.
  • Pack it away.  Began but not completed.  However I did give some to friends and realize I didn’t like others so no point in storing them. 
  • New uniforms.  Ooops.  I needed to figure which shirts I had first.  Now that this is done I will order them tomorrow.  Clothes shopping during a break is fun…even if they are work clothes.  Heck I wear them 6 days a week. 
  • Tax time.  Time to finally send off all the paper work and payments.  I have them done but everything has been nuts.  Don’t want Uncle Sam chasing me down.
  • Ease into workouts.  Superb.  My body cooperated and well so did my doctor.  I have my allergy inhaler again so if I need it I have it while working out.  Oh and I’m sore as heck and love it.
  • Menu planning. One of my big goals is eating dinner at home so simple meals were great.  I enjoyed thinking of new things and also fast things.  I’m hungry after working out so fast is the most important.

This Week’s Goals

  • Enjoy mini vacation.  Some of my good friends are teachers which means VACATION!!! Fun things like lunches, shopping, walking and doing who knows what.  But it’s nice to have a mini vacation for me to because our church kids are on break so our programs are suspended.
  • Organize the pantry. Just like anything there’s an app for that.  I’m excited to remember the fun stuff I’ve bought, label it, and plan how to use it.  I love a good list. Smile
  • Try new fitness class/activity.  I love Zumba and weights but I enjoy a change every once in awhile.  This week is perfect because I have some freedom in my schedule. 
  • Premade essential in fridge.  Easy dinners are good but I need a few more options.  So yesterday I made quinoa, beans, and some pasta salads.  Perfect to throw together in a rush.
  • Chat with friends I miss (this means you!).  Living far away and being super busy makes it difficult to maintain regular communication.  But this week I’m reaching out.  I miss y’all…LOTS!!!
  • Finish closet project FINALLY!  It’s almost done. I’m so proud that instead of just pulling stuff out and putting it back, I redid everything.  It makes it so much easier to to dress and I enjoy my clothes more.  I’ll share with you later this week how I did so.
