Granola Crust Crumble

I love my fruit bowl and fill it to the brim.  If an apple a day keeps the doctor away I’ll keep my fruit bowl stocked.  Fruit sales give a bit of variety to my apples and I can stock the freezer for later.

With a kitchen full of fruit I’m always prepared for a quick dessert.  I usually make a microwave apple crisp but for potlucks I fancy it up a bit.  This crumble was such a hit I’m glad I made a second one for at home so Hunni was able to enjoy his own.

Granola Crust Crumble

Update the traditional apple crisp with blueberries and Indian spices.  Top with a granola crust for the fancy flair.

Prep time: 5-8 minutes               Cook time:  30 minutes (baking)

Ingredients

Crust

  • 1 cup Gluten Free Oats (I use Bob’s Red Mill)
  • 1/2 cup pecans or walnuts
  • 2 teaspoons honey

Filling

  • 4 medium apples
  • 1 pint blueberries
  • 1/4 teaspoon cardamom
  • 1/2 teaspoon ginger
  • 1 tablespoon cinnamon

Instructions

  1. In a blender pulse oats and nuts until coarse.  Add the honey and stir until combined. 
  2. Chop the apples into medium pieces (I leave the skin on) and add to a bowl with the blueberries.  Toss the fruit with the spices to cover.
  3. Spray a 9×13 casserole dish with olive oil and add fruit mixture.  Top with crust mixture.
  4. Bake at 375 degrees for 30 minutes until crust browns.  Serve!
