I’m a bit spicy…Grrr. Not really, I just love all things gingery. Ginger snaps, candied ginger, pear ginger preserves, ginger cupcakes, ginger chews, ginger beer, Ron Weasley…yep, I could go on and on.
For me the spicier the better. Ginger wakes up my senses and has a calming effect on my stomach so it deserves bonus points.
While I love cookies, cake and candies they can be a bit too much. Not the ginger but the sweet factor. Often they are full of sugar and far too many calories for a regular treat.
To reserve the treats for special occasions I sub in banana soft-serve for the everyday. Not just any banana soft-serve…
Gingersnap banana soft serve
Ingredients
- 2 frozen bananas, sliced – I keep a freezer stash using bargain fruit.



- 2 tbsp. candied ginger – If you love the ginger bite by all means use more…I do.

- 1 tbsp. cinnamon
- 1 LARGE ginger snap cookie – mine is gluten-free from the co-op

Instructions
- Chop candied ginger with knife or if you are lazy like me (read: less dishes to do) pulse using the food processor.

- Add frozen bananas and cinnamon to food processor. Pulse until almost creamy. Break in cookie and finish processing.
- Devour!

Ginger, sweet bananas, cinnamon and a cookie make perfect dessert-ness!
Bonus: It’s mostly bananas so enjoy the leftovers stored in the freezer…whenever. ![]()
