When life gives you almonds…

Yesterday is behind me and I didn’t do so bad.  When I stepped on the scale this morning it read 168.8 which is only up 0.8 from yesterday’s WI despite all the nastiness (in quality) food I injested yesterday.  I’m actually pretty happy about that because I know that it won’t be that hard to lose that this week in addition to whatever else my body will let go of. 

I even got in a bit of yoga this morning to make me feel better.  My schedule doesn’t allow for a full on workout on a Sunday morning usually so I had to get in some yoga stretches after I got out of bed and hit the gym this afternoon instead.  But I love starting my day with exercise.

Yesterday I hinted that I made a great treat for myself and the title of todays post gives another hint.  I’ve become a big fan of food blogs as of late and thus my reason for writing this one.  I’m inspiring myself even if I don’t really have any followers.  One blog I love to read it Heather Eats Almond Butter.  She is always talking about her love of almond butter and making her own.  I had lots of raw almonds left from the last time I bought them at Trader Joe’s.  I wanted to try making my own almond butter before I bought a large jar. 

I lightly roasted the almonds in the oven at 400 just to give them that toasted taste.  Then I chopped them finely in food processor for a while.  The crumbs looked like it would make a great topping for fish or chicken too.  Then I gently streamed in olive oil until I got a semi-creamy consistency.  I probably used a tablespoon or 1.5 tablespoons.  I think I should have used more because it is not so spreadable but that’s an experiment for next time.  And then I added some salt and some honey for sweetness.  Just a tad to change up the flavor.  I think next time I’ll add maple syrup.

Voila I had almond butter.  Now comes the fun of trying it on things.  Hunni and I chopped up two small apples last night to snack on and today I had some with my oatmeal.  I like making it myself because I know what’s in it and I can make a small enough batch that I won’t totally eat it all in one sitting.  This may become my new favorite make at home activity.
